People (including myself) speak in my dreams a lot of the time! But there is also communication in symbols because the 'language' of the astral and dreams is symbolic and needs to be intuitively interpreted by the individual who has the experiences.

I'm sure it is possible to communicate in other languages, as I've heard of people meeting others from different countries in the astral yet being able to talk to each other perfectly. In these cases, I think that it's the meaning of what we say that is shared, not the words.

English is the only language I can speak, so when I talk in dreams it is in English. That being said however, once I had a dream and I was speaking fluently in Greek to another Greek person, and I don’t speak Greek! At the time I was spending a lot of time around people who spoke Greek so I am unsure if some of that seeped into my subconscious or what but I was very surprised when I woke up.

Well in one of my first dreams that I had when taking the course there was a waiter who was speaking to us in italian but I could understand him, and I don't speak italian, and I realised I was dreaming, but I woke up :/

Its a fascinating line of inquiry Varpath. I have wondered and looked into that a little over the last year.

From my retrospections it seems to me that communication there is not in any language which is why people from different countries/worlds can communicate without difficulty. Language is only a process born from a desire of thoughts and feelings to communicate with another. In the astral one does not need language as those thoughts feelings are instantly conveyed to the other without the need for the medium of speech. So I imagine from my limited understanding that in the astral we are all speaking the same language because we are using the communication from the Being. This in itself seems to make astral conversation extremely quick and highly detailed. The only trouble is remembering it all *sigh*. lol.

This whole process I think is similar to when in the astral you think of something and it happens or appears . IE you think a ball and a ball appears. So by the time you have thought how you want to talk to someone there and what you want conveyed and what your desire is for asking. All that has already been given. Hence why its so important to control our thoughts and feelings in the physical and consequently in the astral. This is taught how in the courses given freely by Gnosticweb and referred to as 'being in awareness.'

Of course this is only my take from what I have looked into and could all be totally wrong. But hopefully it will offer an interesting perspective and incentive for your own investigations.
